Chocolate Mousse Cake
- 300g (dark chocolate (min. 60% cocoa solids)
- 50g caster sugar
- 150g unsalted butter
- 5 large eggs yolks
- Pinch of salt
- Grated zest of one orange.
- vanilla essence
- Rest a bowl over a pan of hot or boiling water.
- In the bowl, mix the chocolate, caster sugar, butter until all the ingredients have melted.
- Slowly add the egg yolks and mix to a smooth consistency.
- Add a pinch of salt, vanilla essence and the rind of an orange
- Place in a [greased] baking tin and cook/bake at 180c for 30–40 minutes
Crisp Chewy Biscuits
- 80g soft brown sugar
- 125g soft unsalted butter
- 2 table spoons of syrup
- 175g self–raising flour
- 50g crispy rice
- 50g crumbled chocolate
- Set the fan oven to a heat of 140c.
- In a large bowl, beat the sugar, the butter and the syrup together until they become light and smooth.
- Add the flour and mix.
- Mix in the chocolate and crispy rice with both hands until it comes together like a ball.
- Break the paste into little pieces. Form them into balls about the size of a golf ball.
- Put them on a tray wiped with butter or oil. Put the tray into the oven for 15 minutes.
